Popular the world over, the original 'Stroganoff' may have origins in Russia, but its unique combination of smokey, creamy flavours is a natural complement to tofu as the main protein. A delish dish, this satisfying, flavoursome, healthy vegan interpretation of a recipe classic would even fool the Tsar!

PREPARATION TIME:

INGREDIENTS:
1 Pack of Earth Source Foods Smoked Tofu (or plain Firm Tofu)
250gms Mushrooms, sliced
3 Tablespoons olive oil (use more if needed)
½ Tub vegan 'cream cheese'
½ Cup hot water
½ Lemon, juiced
2 Heaped tablespoons vegetable stock powder
2 Heaped teaspoons dijon mustard
1 Teaspoon dry mustard (optional)
1 Teaspoon sweet paprika or smoked paprika
3 Spring onion stalks, thinly chopped – reserve some for garnish.
METHOD:
Slice or cube the tofu and fry in oil until golden. Add mushrooms and cook until starting to brown.
In a jug or bowl, make the 'creamy' sauce by simply mixing together all other ingredients: the vegan 'cream cheese', the hot water, lemon juice, stock powder, mustards, paprika and spring onion. Whisk together with a fork to blend ingredients, then pour the sauce mix over the browned tofu and mushrooms, stir through and gently cook until it thickens – about 5 minutes. So incredibly easy. So quick. So delicious.
SERVING SUGGESTION:
Serve with steamed or boiled rice and a leafy green salad.
VARIATION/ADDITIONS:
Add a chopped brown onion, sliced red capsicum and chopped garlic – fry these together before adding the tofu.
