An unbelievably simple take on a Christmas recipe with a lovely holiday feel. Warm, very filling and soothing to the soul. A dish that can be enjoyed all year round.
MAKES: 6-8 Serves
PREPARATION TIME:

40-50 minutes cook
INGREDIENTS:
2 Cups sweet potato peeled and cut into 1cm cubes
1 Packet of Earth Source Foods firm tofu cut into 1cm cubes
1/2 Cup pecans or walnuts
1/2 Cup dried cranberries
Oil for frying and baking
Maple Glaze
1/4 Cup maple syrup
2 Tbsp apple cider vinegar
1/2 Tsp ground pepper
1/4 Tsp cinnamon
1 Tsp salt
METHOD:
Pre heat oven to 180C
Heat a small amount of oil in a pan and fry the tofu cubes until golden brown, adding a little more oil if needed.
Transfer tofu to a baking dish greased with approx. 3 tablespoons of oil. Add sweet potato, nuts and cranberries. Stir through the oil and make sure all ingredients are well coated.
Bake in the hot oven for 20 to 30 minutes, stirring through at about 15 minutes to brown evenly. Check that the sweet potato has softened. Cook until golden.
Mix all ingredients for the maple glaze. Remove pan from oven, pour glaze over contents, then stir through the tofu and sweet potato mix. Return to the oven for another 10 or so minutes.
Serve immediately with a bright, fresh salad.
TIP:
Salad leaves and an extra dash of apple cider vinegar make this dish perfect for summer celebration. Great for BBQs too.
