With high protein tofu and a dairy-free 'cheesy' sweet potato sauce, vegans can rejoice as there’s no need to eliminate a major food group from diets – pizza! Add your favourite vegetables for toppings and enjoy a meal that’s healthier than take-away and much, much quicker than home delivery.
MAKES: 1 large pizza
PREPARATION TIME:

INGREDIENTS:
Cheesy Sweet Potato Sauce
1 Medium sweet potato peeled and roughly cubed
½ Cup cashews (or substitute walnuts or almonds) -
soaked in warm water for an hour
½ Cup coconut milk
½ Cup water
3 Tablespoons savoury yeast flakes
1 Heaped tablespoon vegetable stock powder
1 Tablespoon olive oil
1 Tablespoon tamari or soy sauce
1 Teaspoon mustard (dry is best)
Marinated Tofu slices
½ Pack of Earth Source Foods Firm Tofu or
1 Pack of Earth Source Foods Smoked Tofu
4 Tablespoons tamari
2 Tablespoons savoury yeast flakes
Pinch salt
3 Tablespoons maple syrup (or 1 tablespoon sugar)
2 Tablespoons oil
Pizza Base
Pre-prepared pizza base (vegan or GF) or make your own
Topping
Tomato paste
Mushrooms, spring onions, pineapple pieces,
capsicum, yellow tomatoes - thinly sliced
Handful pitted olives
Pinch dried oregano
Variations for topping:
Sun-dried tomato, chopped garlic, red onion, capers, basil, artichokes, corn, spinach leaves, marinated eggplant
METHOD:
Preheat oven to 240°c
To create the cheesy sweet potato sauce, steam or boil the sweet potato in water until soft and drain. Combine all ingredients in a blender and mix for a few seconds. If sauce is too thick, add more coconut milk or water until it is of drizzling consistency. Sauce can be refrigerated in a jar for up to a week.
Thinly slice the tofu. Combine all marinade ingredients in a bowl and add tofu. Leave to soak. Once marinated, shallow fry the tofu slices in a pan with a thin layer of oil until golden.
Place pizza base on an oiled tray. Spread with tomato paste and drizzle over the cheesy sauce. Layer toppings and tofu onto the base. Drizzle more cheesy sauce over the top. Add a drizzle of olive oil and salt / pepper to taste.
Bake for 10-15 minutes to cook the pizza base and brown the toppings. Cut into slices and serve as is with a green side salad.
