This incredibly simple tofu pesto is delicious on pasta but could be served as a dip with crackers and sliced veggies. In this version, it is topped with a pistachio 'dust' to deepen the flavour.
MAKES: 4 Serves
PREPARATION TIME:
10 minutes plus cooking time for pasta
INGREDIENTS:
Soft Tofu Basil Pesto
1 Pack Earth Source Foods Soft Tofu
1 Bunch fresh basil - about 1 lightly packed cup - chopped
1 Spring onion green part only, chopped
2 Tablespoons tahini
2 Heaped tablespoons Miso paste
2 Tablespoons olive oil
Pistachio Dust
¼ Cup pistachios
2 Teaspoons savoury yeast flakes*
1 Teaspoon good quality salt
Pasta
1 Pack of pasta of your choice, use gluten free if required
Large pot of water
METHOD:
Set a pot of water to boil for the pasta.
In a food processor combine Earth Source Foods Soft Tofu, chopped basil, chopped spring onion, tahini, miso and olive oil. Pulse until well combined -THAT IS IT!
Place pasta in boiling water and cook to instructions on the packet.
To make the dust put pistachios, savoury yeast flakes and salt in a grinder or pod and pulse till it turns to dust. Alternately use a mortar and pestle.
Drain the pasta when al dente and stir through the pesto, serve and sprinkle liberally with the pistachio dust.
VARIATIONS:
Serve on roast vegetables to add protein for a hearty healthy meal. Stir through cooked and cooled chopped potatoes for a potato salad with a twist.
NOTE:
*Check the savoury yeast flake packaging to ensure it is fortified with B vitamins and is from a vegan source.
