Easy to make, and versatile as a nutritious sandwich spread or just simply and deliciously on fresh sourdough bread or warm toast. No need to store leftovers - there won't be any!
INGREDIENTS:
1 Tub (300g) of Earth Source Foods Soft Tofu
80g Raw cashews
200g Spinach leaves steamed, drained, squeezed and chopped
1 Small red onion, chopped finely
1 Clove garlic, crushed
1 Tablespoon apple cider vinegar
2 Tablespoons nutritional / savoury yeast
¼ Teaspoon dry mustard
½ Teaspoon salt (or to taste)
2 Tablespoons extra virgin olive oil
20g chopped parsley
METHOD:
Soak cashews overnight to soften, then drain. Quick method: soak in hot water for an hour or two and drain.
Place cashew nuts in a blender and process until smooth or still a little grainy. Add tofu, garlic, nutritional yeast, mustard, salt, apple cider vinegar and blend again untill smooth.
Empty into a mixing bowl and add spinach, onion, parsley and stir through with a spoon.
SERVING SUGGESTION:
Spread thickly on thin slices of crusty sourdough bread.
