Easy-peasy quick recipe takes advantage of basic pantry items to make a meal so tasty and moreish, it's guaranteed to satisfy tofu and non-tofu lovers alike! (and so finger lickin' good, even the Colonel would approve).
MAKES: 2 generous main meal serves
PREPARATION TIME: 10 minutes
INGREDIENTS:
1 Pack (375g) Earth Source Foods Firm Tofu
¼ Cup plain flour (gluten free or regular)
1 Teaspoon vegetable stock powder
¼ Teaspoon dried rosemary
¼ Teaspoon dried thyme
½ Teaspoon turmeric
¼ Teaspoon ginger powder
¼ Teaspoon ground black pepper
Frypan with 2cm of oil suitable for frying
METHOD:
Cut tofu into cubes or strips as preferred. Mix or sift all spices, herbs and flour together in a large bowl or large zip-lock bag.
Add cut tofu to the flour mix and coat thoroughly. Keep turning the tofu and it should nearly all stick. If using bag method, seal bag and shake around flour until coated onto tofu pieces. Allow to sit while heating oil.
Fry coated tofu pieces for approximately 2 to 3 minutes in very hot oil (test by dropping in a piece and if it immediately sizzles, it's good to go). Turn pieces that aren't fully submerged in oil to brown evenly. Cook until golden and crispy. Drain fried pieces on paper towel, then serve immediately.
SERVING SUGGESTION:
Serve with salad and home made wedges, a sprinkling of salt and sauces like ESF Vegan Mayo. Alternatively, cut tofu into 2cm cubes and follow recipe to create a tasty pre-dinner drinks nibble – place a toothpick in each to serve. Any leftovers can be kept in an airtight container in the fridge. Reheat in hot oven for 10 minutes (crispy). Because this recipe can be made and kept in the fridge to reheat, this is also a great way to use a whole packet of Firm Tofu when only serving one person.
VARIATION:
Any combination of Cajun or Moroccan spices can be used, including paprika and chilli or add a couple of teaspoons of a pre prepared Cajun/Moroccan spice mix. In addition to the vegetable stock powder which adds saltiness, use a minimum of 1½ teaspoons of dried herbs and spices to every ¼ cup plain flour. Adjust more spice to individual taste.
