Baked Tofu Cubes with Spinach & Garlic

A simple dish that packs a punch where iron and protein are concerned. Pleasing contrast of textures - cooked then cooled and dressed spinach as a bed for warm, crisp tofu cubes. Enjoy as a tasty vegetable side dish, a light meal or satisfying snack.

MAKES: 2 Small meal servings

INGREDIENTS:
1 Pack Earth Source Foods Firm Tofu
1 Bunch of spinach washed/drained
1-3 Cloves of garlic (to taste)
Olive oil
Salt & pepper to taste

METHOD:
Cut tofu into approx. 2cm cubes, place on a greased oven tray and bake at 200°c for 20-30 mins, until the outside has crisped to a golden brown, while the inside is still soft. Steam spinach, then rinse in cold water, drain, squeeze off excess water then chop coarsely. Peel and crush garlic, and mix into spinach, adding a good slurp of olive oil and salt/pepper to taste. Place mixture in serving bowl. When tofu cubes are baked, place onto prepared spinach, drizzle with extra olive oil if desired and serve.
